Zucchini Fritters

This is a great way to get your kids eating more vegetables.  You can make this with zucchini or yellow summer squash, for a hit of Vitamin A.

You will need:
2 medium zucchini
2 tsp. salt
4 scallions (green onions), minced
¼ cup chopped parsley 
¼ cup dill
1 egg, beaten
3/4 cup grated parmesan 
¼ cup flour

Grate the zucchini into a colander in the sink.  Toss with salt and let it sit for 10 minutes. Squeeze out the liquid or press it out with a towel reserved for kitchen use.

Add everything else (scallions, parsley, dill, egg, and Parmesan cheese, and flour). Mix well.

Pan-fry spoonfuls of the mixture in olive oil, flattening with a spatula, 3 to 4 minutes per side.  Drain on paper towels and season with salt.

    We usually make this with with lof and ham covered with cheese>> in the oven and top it on our macaroni. A full meal isn’t a full meal without vegetables and meat.

      I agree that the vegetables are a critical component, but there are other ways to get complete protein without using meat. I will be working on some meatless recipes soon!
