Healthy Mac and Cheese

Homemade Macaroni and Cheese

Macaroni and cheese is easy to make yourself and healthier than what you buy in a box.  Also, you can choose healthier macaronis, like whole wheat (Trader Joe’s) or quinoa (health food stores).

Ingredients
5 cups cooked macaroni of any type (standard elbow, whole wheat, or quinoa)
4 tablespoons butter
4 tablespoons flour
2 cups milk
3/4 cup shredded sharp cheddar cheese, or half cheddar and half swiss cheese
pepper to taste

Preheated the oven to 350°

Melt the butter in a saucepan over medium-to-low heat. Stir flour into the butter and wisk until the mixture has a smooth texture. Gradually pour in the milk. Keep stirring until the mixture thickens well.

Toss in the cheese.  Keep stirring until the cheese is completely melted.

Spray an 8×10-inch baking dish with cooking spray.  Spread a layer of macaroni, then cheese sauce.  Alternate layers.

Bake in a preheated 350° oven for 20 minutes, or until hot and bubbly.
