Sweet Potato Chips

Sweet potatoes are among the healthiest of the root vegetables, rich in calcium, beta carotene, complex carbohydrates, fiber, Vitamin C, and Vitamin B6. (from , “Sweet Potato”).  These chips make a nutritious snack!

4 Sweet Potatoes, peeled and very thinly sliced
2-3 teaspoons of your favorite seasonings
(Examples: salt, pepper, cumin, lemon pepper, dill, dried oregano, thyme—finely ground, chili powder, Penzey’s spice mixes, etc.)
Cooking spray; olive oil is best but any will do

Preheat oven to 350 degrees F.
Cover a cookie sheet with foil and spray lightly with cooking spray.
Spread the thinly sliced potato slices in a single layer on the cookie sheet.
Spray them very lightly with cooking spray.  Use olive oil spray, if you have it.

Lightly sprinkle your favorite spices over the sweet potatoes.

Bake at 350 degrees until crisp and lightly browned.  This could be as little as 20-25 minutes, depending on how thinly sliced the potatoes are.
