Easy Chicken Tacos

Chicken Tacos are an easy summertime meal, but they are delicious all year! Kids can make them or at least help in the preparation.

This is a great recipe to use already-cooked chicken.  It’s easy and fast. The mango provides a sweetness that enhances the flavor.  There are many variations, such as pan-fried fish pieces, turkey, or beef cubes to substitute for the chicken. They all taste great with mango.

You will need:

Chicken breasts or thighs, cooked and cut into cubes or small pieces
1 cup Black Beans, cooked or canned and rinsed well
Cilantro, rinsed and chopped
Corn Tortillas (for the best flavor)
Salsa, jar or homemade: chopped tomato, diced scallions, finely chopped jalapeno, lemon juice
Optional:  Mango pieces

Toppings to serve separately:  Fresh guacamole or low-fat sour cream

Spray both sides of the tortillas lightly with water and stack on a ceramic or paper plate. Cover with a paper towel and microwave for 1 minute. If you’re making lots of tacos, heat only 4-6 at a time so they all heat evenly.

Add the chopped chicken, cilantro, black beans and a dollup of salsa.  Serve the toppings on the side to add to the tacos, if desired.
