Lentil Salad Recipe

This is a cold lentil salad, but it can be warmed if you wish.  The lentils are whole grain carbohydrates that have many nutritional benefits.

You will need:
1 1/2 – 2 cups precooked brown lentils
2 scallions (green onions), chopped
1/3 cup Feta cheese, crumbled
1/3 cup pepper, diced
1/4 cup sundried tomatoes, chopped
1 cup spinach leaves, fresh, washed and spun or dried

Dressing:
1/3 cup oil-vinegar salad dressing (see Simple Salad Dressing from the How To section)
1 clove garlic, crushed

Mix dressing with mustard and garlic.  Pour over lentils and toss.
Add all the other ingredients.  Mix and serve.
