Jeannie’s Peanut Butter Bars Recipe

Thanks to Jeannie Engle for this great recipe!

This is a large recipe, assuming that you want to make enough to last awhile! They are insanely delicious, and make great Christmas, Kwanza, or Hanukah gifts in a pretty tin. Layer them with waxed paper in between the layers of bars.

The peanut butter and cereal add nutrition.  For those concerned about the sugar content, you might want to use only 1 cup of granulated sugar.

Ingredients:
8 Cups Special K Cereal
2 Cups Karo Syrup (1 jar)
2 Cups Sugar
4 Cups Peanut Butter
1 Pkg. Butterscotch Chips
1 Pkg. Chocolate Chips

Bring Karo Syrup and sugar to a rolling boil.  Remove from heat. Stir in peanut butter until smooth.   Add cereal and mix.
Spread in a 9 x 12 baking pan.

Microwave chocolate chips together. Mix until smooth.
Spread over cereal mix.
Let stand at least 10 minutes to cool the chocolate topping.
Cut into bars.  Let sit for an hour to cool thoroughly.

Makes 2 dozen bars.
