Grilled Tomatoes

Grilled Tomatoes are simple to make, indoors on a flat stove-top griddle or outdoors on the grill. They look beautiful on your plate!

If you use metal skewers, be careful not to handle them with bare hands.  Use a potholder to move them around!

You will need:

Skewers, wood or metal
Olive oil or Canola oil
6 medium tomatoes, cut in half
Your choice of dried or fresh herbs:  oregano, thyme, dill, basil
Salt and pepper to taste
Optional:  Light sprinkle of red pepper flakes, garlic powder, lemon pepper, celery powder, etc.

Preheat the griddle or outdoor grill so it’s hot.

Skewer the halved tomatoes and lay them on a cookie sheet. Spray the open side of the tomatoes lightly with the oil. Sprinkle with herbs, salt, and pepper.  You can vary the herbs for a differing taste each time.

Place skewered tomatoes on the griddle face down and cook on medium heat for 2-3 minutes. Flip over and grill until they just start to soften. Remove quickly and serve.
