Ginger Chicken

This is a healthy cold chicken salad that has appealing tastes that kids love.  It is wonderful for leftover chicken or for yesterday’s Thanksgiving turkey!

You will need:

2 cups cooked chicken, cut up into bite-size pieces
fresh pineapple pieces, cut into one-inch cubes
raisins
almonds, slivered (or other kind of nut), chopped
1/4 cup fresh ginger, finely chopped
1/4 cup mayonnaise
Sprinkle of black pepper or red pepper flakes

Mix all ingredients except the almonds and mayonnaise together.  Add a glop of mayonnaise and stir together.  Add another glop at a time until you think you have enough to hold the salad together (no need to overdo it).  Add the almonds just before serving.  Serve chilled.
