Coconut Corn

Thanks to Wikipedia for this recipe. The tastes are so wonderful that kids and parents alike will enjoy it. 

You will need:

4 ears corn, with the kernels cut from cob, or 2 cups of frozen corn (safer for kids cooking)
1 cup light coconut milk (Trader Joe’s has it)
1/4 tsp salt
2 tbsp. fresh cilantro, washed and chopped
juice of 1 lime (at least 1 tbsp)
1/4 tsp. crushed red pepper or pepper flakes (optional)

Combine corn kernels, coconut milk, and salt in a medium saucepan.  Bring to a boil, then lower heat and maintain an active simmer.  Cook, stirring occasionally until most of the coconut milk has evaporated, 12 to 15 minutes.

Stir in cilantro, lime juice, and crushed red pepper.  Serve.  4 servings–about 1/2 cup each.
