Raspberry Apple Salad

Provide kids with tasty salads and they will be salad eaters all their lives.  Apple Raspberry Salad is a great salad to get kids started eating greens.

The raspberries provide a sweet touch along with carbohydrates, while the feta cheese and sunflower seeds provide protein and fats.  Adults would love this salad with Gorgonzola cheese as an alternative to the Feta, but kids may shy away from that acquired taste.

You will need:

Apples pieces, bite-size and cubed, organic if possible (your choice of apple)
1 small container of Raspberries, thoroughly rinsed
Lettuce, washed, chopped, then chilled in the frig
Sunflower Seeds
Feta Cheese, crumbled
Optional: small amounts of thinly sliced red onion

Dressing:
Olive Oil
Red Wine Vinegar
Small dollop of Dijon Mustard
Salt and pepper to taste

Combine the dressing ingredients, mix well, and toss with the lettuce.  Sprinkle the crumbled feta cheese, raspberries, sunflower seeds and apple chunks on top.  Serve immediately.
